*TAPEWORM SANDWICHES*


 I have not made those but it’s a great idea for kids during Halloween.

-8 hot dogs
-8 hot dog buns

-1/4 cup ketchup

Bring a pot of water to a boil.
Slice each hot dog into long, worm-like strips.
Dump hot dog strips into boiling water and cook until they begin to curl a bit.
Drain.
Return cooked hot dog worms to pan and toss with ketchup until thoroughly mixed.
Serve in hot dog buns.

*ANTS ON A LOG*


Makes a yummy snack that looks like ants sitting on a log. Excellent idea for a kids school lunch or simply for a healthy summer snack.

-Celery stems are an excellent source of vitamins B1, B2, B6 and C with rich supplies...
of potassium, folic acid, calcium, magnesium, iron, phosphorus, sodium and plenty essential amino acids.
-Peanut butter is loaded with protein and “good” fats,
-Raisins contain fiber, anti-oxidants and help with bone growth.

celery sticks (cut about 3 inches long)
peanut butter
raisins

Spread the peanut butter on the celery stick.
Put the raisins on top of the peanut butter.
Enjoy with a friend.

*The traditional "Ants on a log" is celery, peanut butter and raisins. But since kids love this snack so much, here's a few ways to change it a little.

VARIATION:
-celery, peanut butter, and raisins or craisins (for red ants on a log)
-celery, peanut butter, a layer of honey, raisins
-celery, peanut butter, top with chocolate chips, pumpkin seeds, dried fruit pieces, granola, or different types of nuts.

-celery, cream cheese, paprika, roasted peppers and/or pine nuts
-celery, cream cheese, cinnamon, and craisins or dried blueberries or tiny chocolate chips or granola
-celery, cream cheese, chopped pineapple on top

-celery, Cheez Whiz

-celery, nutella, tiny marshmallows or nuts

-celery, almond butter, raisins

-celery, hummus, roasted peppers

-celery stuffed with chicken salad

*CHOCOLATE COVERED KIWI POPS*

All I can say is yum. These looks so freakin yummy, and so easy! These kiwis may be covered in chocolate, but kiwis are so healthy for you because they are full of vitamin C, E, folate, fiber and potassium. I will just assume that it cancels out the bad part.

Kiwi
1 cup dark chocolate, chopped
1/2 cup Coconut oil

Kiwi – peel and cut into 1 inch thick rounds, with a popsicle stick in each round.
Freeze on a tray in the freezer.
Melt over double boiler: 1 cup dark chocolate and 1/2 cup Coconut oil.
Cool down to room temp.
Dip each Kiwi-pop into the chocolate mixture (it will immediately turn crispy) and place on a tray to refreeze.
Enjoy!
Anita St says: You could dip them in coconut, ground up nuts, use other fruits like fresh figs or strawberries.

*FRUIT SALAD ICE CREAM CONE*


Dressing up fruit salad in an ice cream cone. This is a great way to get creative and use your favorite candies and your favorites fruits. Awesome for a kids party.

-Ice cream cones
-Cupcake liners
-Candies of choice: Skittles, M&M, raisins, Glosettes, Jelly-Beans (whatever your kids like)
-Fruit of choice: honeydew, cantaloupe, watermelon, mango, papaya, blueberry (be creative)

Filled the bottom portion of the ice cream cone with candy. Kids love the candy-filled surprise ending. My taste preference is Skittles, they don’t melt... so even better.
Place a cupcake liner inside the cone over candy of choice, to prevent the fruit from getting soggy.
For easy stacking of the fruits, use at least two different size melon ballers.

NOTE: you can coat the inside of the cone with melted chocolate to prevent sogginess.

*MONSTER SANDWICH*


(be creative with this one... anything works) the kids will love this in their lunch box.... it’s a nice surprise.

-refrigerated biscuit that has been rolled out
-middle filling can be anything you want... shredded bee...f, tuna salad, hot dog, hamburger, cheese, turkey,meatballs, bbq of some kind, use your imagination - options are limitless

Follow the biscuit cooking directions, but keep a close eye on them as they probably will cook faster since they have been rolled flatter and thinner. Don't forget to put the filling in before baking. Let the sandwich cool a little so it will be easier to glue the eyes on.

-cream cheese mix with a little mayonnaise as a binder or you can use a dip to assemble the eye together.
-cut cherry or grape tomatoes eyeballs in half and black olive for the eyes
-green hair is cut up lettuce or green pepper
-teeth is sliced garlic, rice or pine nuts.... you can also use slivered almonds.

*CELERY WITH PEANUT BUTTER*


Another great idea for kid's lunchbox or for a road trip snacks. All u need is a jar with some peanut butter and cut up celery. :))

*STRAWBERRY FRUIT ROLL-UP*


Fruit roll-ups. Fruit smash. Fruit leather. Whatever you call it, it’s fun! Just puree and dry strawberries.... it’s easy with little sugar, no preservatives, and a yummy taste. I couldn’t believe that I could actually make these at home. Kids absolutely love this.

1 1/2 lb (4 1/2 cups) strawberries, cut in half
2/3 cup sugar

Purée strawberries and sugar in a blender until smooth, then strain through a fine-mesh sieve into a large heavy saucepan.
Place the saucepan over medium-high heat, and bring the purée to a boil.
Then simmer over medium-low heat, stirring occasionally until thick.
The puree will have reduced to about 1 to 1 ¼ cups in about 45 minutes to 1 hour. It will also be darker in color.
Preheat oven to 200° F with rack in middle.
Line a large baking sheet with nonstick liner like a silpat or parchment paper. (I used two cookie sheets)
Pour hot purée on prepared baking sheet and spread thinly, and as evenly as possible with a spatula into a 15- by 10-inch rectangle.
Dry the cooked purée in oven until it feels drier (it shouldn’t stick to your fingers) about 2 ½ to 3 hours.
Cool for at least 3 hours and up to 24.
Cut into strips and roll up with parchment.
The fruit roll-ups will keep in a sealed bag at room temperature for 1 month, if you don’t eat it all before then.

*BANANA DOGS*

1 hot dog bun
1 banana
2 Tbsp. peanut butter
2 Tbsp. Nutella, jam or honey

Butter one side of hot dog bun with peanut butter, butter the other side with Nutella, jam or honey.
Place the peeled banana in the hot dog bun.
NOTE: You can sprinkle with chocolate chips, raisins or coconuts (optional)

PEANUT BUTTER GRANOLA BARS


(recipe from my friend Angela L.) this is a good way to start your day or a good snack to put in your kids lunch pail.

1 egg white
1/2 cup chunky peanut butter
1/3 cup brown sugar
1/4 cup honey
1/2 cup unsalted butter, melted
2 cups old fashioned oats
1/4 cup slivered almonds, toasted
1/3 cup miniature chocolate chips

Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.

Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to hang over the sides. Spray the parchment paper lightly with cooking spray.

In a medium bowl, using a hand beater, beat the egg white until frothy. Stir in the peanut butter, brown sugar, and honey. Add the melted butter, oats and almonds. Stir to combine, then add the chocolate chips.

Using a rubber spatula, spread mixture into the prepared baking pan, pressing lightly to form an even layer. Bake until the edge of the mixture begins to brown, about 15 minutes. Remove from the oven and let cool for at least 1 hour. Cut into 1 1/2-inch squares and serve.

Have picky eaters at your house?
Try serving chicken, egg or tuna salad in an ice cream cone instead of between bread.
ids love this crunchy lunch that resembles dessert.

*HIGH PROTEIN LUNCH WRAP*

(these are so good, and good for you too)

1 pkg. whole wheat original flat out wrap
1 Tbsp. peanut butter
1 Tbsp sugarfree strawberry preserves (I used regular jam)
1/2 banana, cut into small chunks
4 strawberries, cut into small pieces
1 Tbsp. granola

Lay wrap flat, put peanut butter on one side and jelly on the other.
Put strawberries and banana all over the top.
Sprinkle granola over the top and roll up.
Cut into 3 pieces and enjoy.

*NUTELLA-MALLOW PILLOW POCKETS*


1 package puff pastry, 2 pastry sheets thawed
1 cup Nutella spread
1 cup mini marshmallows
Egg white wash: 1 egg white whisked with 1 tbsp. water
Powdered sugar for dusting

Preheat oven to 350 degrees F.
Cut each square of pastry into 4 equal size pieces (I trimmed mine just a little).
Spread a couple tablespoons of Nutella spread onto the center of each pastry leaving 1/2 inch border around edges.
Top each with about 12-15 mini marshmallows and fold over to form a little triangle.
Crimp edges firmly with the tines of a fork.
Brush with egg white wash then sprinkle with granulated sugar.
Bake for 22-25 minutes or until pastry just turns golden.
Remove and let cool for 5 minutes, sprinkle with powdered sugar then dig in!

*THE RUBBER BAND TRICK*


How to Keep a Cut Apple Fresh in Your Lunchbox

You want to send your kid to school with a sliced apple but you don't want those apple slices to turn brown. So what do you do? You use this smart little rubber band trick and your apple will stay fresh.
You can also send some yogurt or peanut butter for dipping or just put some peanut butter between the cuts. Kids love them. :))
