*SLOW COOKER BEEF STROGANOFF*


 easy and yummy!!! :))

2 pounds beef stew meat
1 cup chopped onion
2 cans (10 3/4 ounces) condensed golden mushroom soup
1 Lipton Onion Soup pouch
1 tup of fresh sliced mushrooms(two cups or so)
Fresh ground black pepper
1 pkg (8 oz.) cream cheese, cubed
1 container (8 oz.) sour cream
6 cups hot cooked noodles or rice

In 3 1/2-to 4 1/2-quart slow cooker, mix beef, onion,soups, mushrooms and pepper.
Cover and cook on low heat setting 8 to 10 hours or until beef is very tender.
Stir cream cheese into beef mixture until melted.
Stir sour cream into beef mixture.
Serve over noodles or rice.

*SLOW-COOKER BAKED POTATOES*



Every time I mention on facebook that I'm throwing baked potatoes in the crockpot people are amazed. It really is that easy. Wash your potatoes, poke them, wrap them in tin foil and cook them on low all day in ...a slow cooker. They come out perfect and soft and delicious! We have baked potatoes for dinner probably once a week. We top them with butter, light sour cream and cheddar cheese. Sometimes ham and broccoli will be potato toppers too. Et Voila!!! barbecue your meat and supper is ready. :)) :))

potatoes (I used russets)

Wash your potatoes well and let them dry. Then wrap each potato in a piece of foil (no need for pricking them).
Place the foil wrapped potatoes in your crock pot. I put 8 medium sized potatoes in my 4 quart crock pot, but I probably could have fit at least 10.
Cook on low for 8 hours.

MEATBALL SUB


(slow cooker recipe)
I make my meatballs ahead of time and freeze them. Make up several pounds of beef, freeze them in ziploc freezer bags, and then pull out what you need for dinner. These simmer all day in the crockpot and smell so good! Perfect for a weeknight when you want something hot, but everyone has to eat quick and go.

1 lb ground beef
1 egg
3/4 cup plain bread crumbs
garlic salt
salt and pepper
1 tbsp milk
2 cans (15oz) tomato sauce
2 tbsp Italian seasoning
1 cup parmesan cheese, grated
2 cup mozzarella cheese, shredded

8 Hoagie buns

Mix beef, egg, bread crumbs, garlic, salt, pepper and milk in large bowl.
Shape into small bite size balls.
Cook in hot skillet, turning, until completely cooked. At this point you can let them cool, and freeze them. Or, use them immediately.
Put your meatballs in a crockpot set on low with the tomato sauce and Italian seasoning.
Cook for 6 hours. When ready to serve, preheat oven to 500 degrees.
Place about 5 meatballs on each hoagie, with sauce, parmesan and mozzarella cheese.
Bake until cheese turns golden brown, about 10 minutes. Enjoy!

SLOW-COOKER LASAGNA


8 uncooked lasagna noodles
1 pd ground beef or ground turkey
1 tsp. Italian seasonings
1 (28 oz.) can or jar spaghetti sauce
1/3 cup water
1 (4 oz.) can sliced mushrooms, opt
1 (15 oz.) low-fat ricotta cheese
2 cups shredded mozzarella cheese

Brown ground beef in skillet. Drain, Stir in Italian seasoning.
Break noodles into thirds. Place half in bottom of greased slow-cooker.
Spread half ground beef mixture over noodles.
On top of beef, layer ½ sauce, 1/2 water, ½ mushrooms (opt), ½ ricotta cheese and ½ mozzarella cheese. Repeat all layers.
Cover. Cook for 5 hours on low.

Here’s his recipe for Slow-Cooker Vanilla Yogurt:
●1 gallon 2% milk (“Skim milk works, but the yogurt will not be as thick. Whole milk makes the yogurt even thicker and richer.”)
●1 cup plain, or vanilla, store-bought yogurt (“You’ll need this as a starter because it has live yogurt cultures.”), OR 1 cup yogurt saved from your last batch of Slow-Cooker Yogurt
●Up to 1 full packet powdered milk (packet size to make 1 quart), optional (for thickening)
●Up to 2 Tbsp., or 2 packets, unflavored gelatin, optional (for thickening)
●Up to 5 Tbsp. vanilla, optional (“This is for flavor. My basic formula is 1 Tbsp. vanilla per quart of yogurt, but you can be flexible with this.”)

1. Turn your slow cooker on Low, plug it in, and add a gallon of milk. Whisk in the optional powdered milk.
If you want to maximize production, add more milk until it comes to within ¾” of the top of the cooker, and add a proportionate amount of powdered milk, if you wish.
Cover and allow milk to heat for 2½ hours.

2. When the time is up, pull the plug on the cooker, and do not plug it in again. Keep your cooker covered.

3. Meanwhile, soften the optional gelatin in ½ cup cool water for 5 minutes, and then transfer it to a double boiler.
 
4. Heat in the double boiler until the gelatin granules are dissolved, stirring continually. Add a cup or two of the milk mixture from your slow cooker to the gelatin.

5. Stir and heat just until warm, being careful not to overheat the gelatin, since overheating gelatin reduces its gelling properties.

6. Whisk this gelatin mixture into milk in the cooker.

7. Cover and then let it sit for 3 hours.

8. When the 3 hours are up, dip 3 or 4 cups of the milk into a mixing bowl.

9. Whisk the cup of live-culture yogurt into the milk in the bowl.

10. Pour and whisk the bowl contents back into the cooker.

11. Cover. Wrap a large towel (or snuggie) around the cooker to keep the warmth in.

12. Let the mixture sit for 8 hours or overnight.

13. Pour one cup of the new yogurt into a jar and refrigerate until your next batch. (This will be your live-culture yogurt for making fresh yogurt next Sunday.) You can add one small store-bought yogurt to each new batch, along with the saved starter to renew your culture.

14. If you wish, whisk the vanilla into the remaining yogurt.

15. Refrigerate your yogurt in canning jars or other containers.

16. You can add fruit or sweetener as you enjoy the yogurt over the next week or so if you like it that way.

Yogurt-Making Tips
1. Find the consistency of yogurt that you like best, and then make it that way:
More Gelatin = thicker yogurt
More powdered milk = thicker yogurt
Higher fat content milk (whole vs. 2% vs. skim) = thicker yogurt
2. About sweetenings and flavorings:
I almost always add vanilla extract at the end of the process, 1 T. per quart. Carol [my wife and Phyllis’ cousin] never adds any sweetener; however, I usually add some Splenda. I have poured a cup of frozen blueberries/raspberries/strawberries/blackberries, etc. into the quart jar prior to adding the yogurt, and it turns out well. Generally I just use the vanilla, and add fruit and or sweetener when I’m ready to eat the yogurt.
3. Tthis slow-cooker, homemade yogurt tastes substantially better than store-bought and far better than the cheaper store brands. Since we make our own, we know it has fewer additives and less sugar or high-fructose corn syrup. Plus, it’s fresher.
4. I always add the vanilla at the end of the process; I have to wonder if the alcohol in the vanilla might kill the Yogurt Bugs.
5. You can turns this into Greek-style yogurt, by putting the yogurt in a cheesecloth-lined colander, and draining off some of the liquid. She’s learned, though, that if she’s mixed gelatin into the milk, the liquid will not drain off, and the yogurt just sits there.
6. It isn’t necessary to use gelatin or powdered milk. If you don’t, the end result is more of a drinkable yogurt, and that’s good, too. I’d probably use whole milk if I didn’t add the gelatin. As you can see, there’s lots of flexibility here.
The magical time is when you get up in the morning, unwrap the swaddling clothes surrounding the slow cooker, and dip in the big whisk to see the creamy smoothness miracle which has occurred overnight.

MEATBALLS

(slow-cooker recipe)

1 1/2 lbs ground beef
1/2 cup bread crumbs or quick-cooking oats
... 2 eggs
1 tsp. garlic salt
1/2 tsp. ground ginger
Salt and pepper to taste
------
Sauce
1 can (14 on) crushed pineapple
1/2 cup brown sugar
1/4 cup vinegar
2 tsp. soy sauce
1 cup chicken broth
1/4 cup BBQ sauce de sauce BBQ (opt)
1 tbsp. corn starch
-----
Mix all meatball ingredients, shape mixture into meatballs.
Mix all sauce ingredients in slow-cooker, add meatballs. Cook on high for 4 hours or on low for 6 hours.
Before serving, add corn starch (which has been mixed with a little water) to the meatballs to thicken sauce.

CUBAN BRAISED BEEF

1 (1 1/2 lb) Beef, shoulder palette
1 (28 oz)can diced tomatoes
2 red bell peppers, sliced 1/2 inch thick
1 onion, diced
1 tsp. ground cumin
2 tsp. dried oregano
Pinch of salt and pepper to taste

Place roast in slow-cooker, place vegetable over roast. Sprinkle cumin, oregano, salt and pepper.
Cook on high for 5 hours
Serve with rice and some fresh coriander.

GREEK POT ROAST

3-4 lb cross rib roast (boneless)
1 3/4 cup spaghetti sauce
1 tsp dried oregano
1/2 cup pitted black olives
Feta Cheese

Brown roast in frying pan on all sides.

Transfer to slow cooker.
Mix remaining ingredients and pour over top.
Cook on low all day.
Cut meat and serve with crumbled feta cheese.

ROAST IN SPANISH SAUCE

2 to 3 lb chuck roast
1 large green pepper, chopped
1 medium onion, chopped
3 or 4 tomatoes, chopped
Salt and pepper
2 cloves garlic, minced
1 tbsp. vinegar

Tenderize meat by piercing wiht knife.

Mix the vegetables together with the vinegar. Place half of the vegetable mixture in the crock pot and place the meat on top.
Pour the rest of the vegetables on top of the beef.
Place your lid and set on high for about 6 hours, or low for 10.
The vegetables cook down to a terrific sauce, kind of like warm gazpacho.

Don't be tempted to improve this dish by using wine or a better cut of meat. It works best with vinegar and less expensive meat.
It can be prepared hours in advance and is a nice variety from a traditional roast beef dinner.
It can also be roasted in the oven, use your own judgement on temperature and cooking time.

PORK TENDERLOIN IN A CROCKPOT

2 Pork Tenderloins, rub with spice ( I used Cajun) and sear in a frying pan.
Potatoes, peeled and cubed (enough for you family)
5 Carrots, peeled and cut in pieces
2 Parsnips
1 onion
2 stalks celery
Mushrooms

In your crock pot, sprinkle 2 TBSP of flour and one packet of onion soup mix on the bottom.
Now add the vegetables and pour enough water so that you can see it just under the vegetables.

Lay the pork tenderloins on top and let it cook for the day. About 8-10 hours on low.

We had this tonight...nice flavour and the sauce was a good gravy.

SUPER EASY SPICY TOMATO BASIL BISQUE

2 cans condensed tomato soup
2 soup cans water (really hot or boiled)
Approx 2 tbsp sun-dried tomato pesto (or regular pesto)
1 heaping tsp minced garlic
1 tsp dried basil (or a little more fresh chopped)
1 can ground tomatoes
 A few shakes of red pepper flakes
8 oz Phily cream cheese cubed

Add everything except cream cheese to crock pot until hot, then add cream cheese, stir it in and turn the slow cooker to medium for approx 4 hours.
Add cooked basmati rice if you like for the last 1/2 hour

This stuff tastes just like the kind I buy at Safeway for $6.50 for a small tub.

SWEET AND SOUR CHICKEN

 slow-cooker recipe

2 tbsp. Ketchup
1 cup water
1\2 cup white vinegar
1 tbsp. soya sauce
1 cup brown sugar, packed
4-5 boneless, skinless chicken breasts, cut bite size
2 tbsp. cornstarch
2 tbsp. Water

Combine first 5 ingredients in slow-cooker. Stir. Add chicken. Stir.
Cover. Cook on Low for 6 to 8 hours or on High for 3 to 4 hours.
Combine cornstarch and second amount of water in small bowl. Stir into slow cooker.
Cook on High, stirring often, for 15 to 20 minutes until thickened.
For faster cooking, pour into saucepan. Heat on stove, stirring often, until thickened.
Serve with rice or noodles.

CHICKEN STROGANOFF


slow-cooker recipe

1 lb frozen chicken breast
1 can sliced mushrooms
1 can cream of mushroom soup
1 pkg onion soup mix
1- 16 oz tub sour cream

Place frozen chicken breast and mushrooms in the bottom of the crock pot. Mix remaining ingredients and pour over.
Cook on low for about 6-7 hours. Stirring hourly so the sauce doesn’t stick and burn.
Before serving, I shred the chicken in the pot with the sauce and serve over egg noodles.

TURKEY LOAF

 slow-cooker recipe

1 large egg, fork-beaten
1/2 cup finely chopped onion
Pinch of salt and pepper
1/4 tsp. ground thyme
1 tsp. prepared horseradish
1/2 cup rolled oats (not instant)
1 1/2 lbs. ground turkey
2 tbsp. ketchup
1 tsp. prepared mustard

Combine first 6 ingredients in bowl. Mix well. Add ground turkey. Mix.
Turn into greased slow-cooker.
Mix ketchup and mustard in small cup. Spread over top.
Cover. Cook on Low for 5 to 6 hours or on High for 2 ½ to 3 hours.
Serves 6.

CHICKEN CACCIATORE

(Slow-Cooker recipe)

1 large onion, thinly sliced
1-1/2 pounds skinless, boneless chicken breasts
2 6-ounce cans tomato paste
8 ounces fresh sliced mushrooms
1/2 teaspoon salt
1/4 teaspoon pepper
2 cloves garlic, minced
1 teaspoon oregano
1/2 teaspoon Basil
1 Bay Leaf
1/4 cup dry white wine
1/4 cup water

Put sliced onion in bottom of Crock-Pot. Add chicken pieces.
Stir together tomato paste, mushrooms, salt, pepper, garlic, herbs, white wine and water. Spread over chicken.
Cover: Cook on Low 7 to 9 hours. (High: 3 - 4 hours).
Serve chicken pieces over hot spaghetti or favorite pasta (I like Rigatoni or Penne)

CHICKEN IN A POT

2 carrots, sliced
2 onions, sliced
2 celery stalks with leaves, cut in 1-inch pieces
3 pound broiler/fryer chicken
1 teaspoon salt
1/2 teaspoon coarse black pepper
1/2 cup water, chicken broth or white wine.
1/2 teaspoon basil

Put carrots, onion and celery in bottom of Crock-Pot. Add whole chicken. Top with salt, pepper, liquid. Sprinkle Basil over top.
Cover, cook on Low 8 - 10 hours (High: 3-1/2 to 5 hours)

MAGIC MEAT LOAF

2 pounds ground beef
2 eggs
2/3 cup quick cooking oats
1 package dry onion soup mix
1/2 cup ketchup
Optional: 1 medium onion diced
Reserve 2 tablespoons ketchup

Combine ground beef, eggs, oats, soup mix and remaining ketchup (and onions if used).
Shape into a loaf, put in crock pot, top with remaining ketchup.
Cover, cook on Low 8-10 hours, (High 4 to 6)
Serve with mashed potatoes and gravy, rice or noodles along with steamed frozen vegetables or a salad.

ORIENTAL BEEF AND NOODLES

1-1/2 pounds lean, boneless sirloin, cut into thin strips
1 red bell pepper, chopped
3 cloves garlic, minced
3 carrots, chopped
2 tablespoons rice vinegar
1/4 cup tomato sauce
1/4 cup sherry
1 tablespoon oyster sauce
1 teaspoon sugar
3 tablespoons chopped peanuts
12 ounces hot cooked vermicelli pasta

Combine all ingredients, except noodles, in Crock Pot.
Cover: cooK on Low 8 to 10 hours (High 4 to 5 hours) Server over noodles

BEEF POT ROAST

Start with a 2-3 pound boneless Chuck Roast (or even bone in) rub it with garlic, fresh ground black pepper and season with salt.
Sear it on all sides in a cast iron skillet where you have added a couple tablespoons of cooking oil.

Meanwhile for the crock pot: Add:
one can of beef bouillon
one package of Lipton's Onion Soup dry mix
2-3 stalks of chopped celery
1 medium onion chopped

Add the seared roast to the crock pot and allow to cook until almost tender. Add:
3 -4 whole carrots, chopped (or a bag of the baby carrots)
Add:
3-4 medium peeled potatoes (or cook these separately)
Optional add: 4-5 sliced fresh mushrooms and 1/4 cup of Burgundy
Cook until meat can pull apart with a fork.

SLOW COOKER SALSA


1 can (28 oz. ) diced tomatoes (with garlic and onion)
3 medium onion, chopped
1/4 cup vinegar
2 - (4 oz.) canned chopped green chilies
1 tsp. dried crushed chilies
Salt and pepper
1 tsp. sugar
1 1/2 tsp. paprika
1 green pepper
Oregano and parsley
1 garlic clove, minced
2 tsp. lemon juice
Cilantro
5 1/2 oz. tomato paste (opt)

Add all ingredients to slow cooker and cook on high for 2 1/2 to 3 hours. Cool.
Opt: 3/4 cup vinegar, 1/4 cup brown sugar
