CARROT COOKIES

3/4 c. white sugar
1 c. margarine
1 t. vanilla
2 c. flour
2 t. baking power
3/4 c. coconut
1 c. cooked grated carrots
2 eggs
1/2 t. salt

Cream margarine & sugar. Add carrots, eggs & vanilla. Mix well.
Mix flour, baking power & coconut to a seperate bowl. Add dry ingredients to 1st mixture.

Drop onto greased cookie sheet....teaspoon size.

Bake @ 400F 10-15 min..lightly brown.

While cookies are baking, mix the icing.
1/2 juice of an orange & the zest
1 c. icing sugar
1 T. butter
Mix together. As soon as the cookies come out, drizzle icing on hot cookies.
