FESTIVE CHERRY TRIANGLES


(recipe from my friend Nancy F.)
Those r very good and very festive during the Christmas holidays. :))

BASE:
1/3 cup Crisco
1/2 cup sugar
Pinch of salt
1 egg
1 tsp. vanilla
2 cups flour

TROPPING:
1 can Eagle Brand
1/4 cup orange juice or brandy
1 1/2 cups coarsely chopped pecans
1 cup red candied cherries, halved
1 cup green candied cherries, halved
3/4 cup chopped dates
Preheat oven to 350’F

1. BASE: Cream crisco, sugar, salt, egg and vanilla until light and creamy. Gradually add flour on low speed, mixing until crumbly. Press firmly onto parchment paper-lined 15 x 10 inch (2 L) jelly roll pan. Bake in oven for 5-6 minutes and set aside.

2. TOPPING: Stir together Eagle Brand, orange juice, pecans, dates and cherries. Mix well. Spread evenly over base.

3. Bake 20-25 minutes longer. Cool thoroughly and cut into triangle or squares.

NOTE: To cut triangle shape, first cut 2“ strips, then cut strips into 2“ squares and cut squares diagonally into triangles.

  1. I didn't have crisco, so used butter, with no parchment paper. Now I cannot lift them off the cookie tray. Any suggestions to save this would be appreciated?
