LEMON BARS


1 cup butter, melted
1/2 cup icing sugar
2 cups flour

Place in a bowl, stir until the texture forms a nice dough. Press dough in an 8 x 8 pan.
Bake at 350'F for 15 minutes.

4 eggs
1/2 tsp. salt
2 cups sugar
8 tbsp. lemon juice
1/2 tbsp. grated lemon rind
4 tbsp. flour
1 tsp. baking powder

In another bowl, mix well. Spoon over the cooked dough.
Bake at 325'F for 30 minutes, until an inserted toothpick comes out clean.
Sprinkle with icing sugar. Cut into bars when cool.
