LEAH CARSON'S CARROT CAKE

2 cups white sugar
2 cups flour
3 cups finely grated carrot
2 tsp. baking powder
1 1/4 cups vegetable oil (she uses canola)
4 eggs
2 tsp. cinnamon
pinch of salt
2 tsp vanilla

Blend dry ingredients together. Add oil, eggs, and vanilla. Bake 350 degrees 45 - 60 minutes. Frost with cream cheese icing.
