CHEESY HAM CHOWDER
2 cups diced potato
1 cup diced onion
1/3 cup diced carrot
1 chicken bouillon cube
1 cup water
1 tsp. parsley flakes
3/4 cup peas, fresh or frozen
1 (6 1/2 oz.) canned flaked ham
2 cups milk
8 oz. mild processed cheese, cut up (Velveeta)
Put first 6 ingredients into saucepan. Cook until vegetables are tender. Cool a bit, then run through blender. Transfer back into saucepan.
Add peas, ham, milk and cheese. Heat, stirring often. Gently simmer to cook peas. Makes about 8 cups.
