STRAWBERRY COBBLER


(recipe from my friend Nancy F.)

2 cups frozen strawberries, drained (save juice)
1/2 cup strawberry juice + water
1/3 cup sugar
1 tbsp. Cornstarch
1 tbsp. Lemon juice
1/2 tsp. Cinnamon

Dough:
1 cup flour
1/4 cup sugar
2 tsp. Baking powder
Pinch of salt
3 tbsp. cold butter or margarine
1/2 cup cold milk

Combine juice, sugar & cornstarch and cook until mixture thickens. Add lemon juice, cinnamon and strawberries. Pour into greased casserole.
Dough: Mix flour, sugar, baking powder and salt into bowl. Cut in butter until crumbly. Add milk all at once. Mix to moisten. Drop by spoonfuls over strawberry mixture.
Bake uncovered in 425'F oven for about 20-25 minutes until risen and browned.
