SPEEDY CHICKEN STIR-FRY


(ready in 25 minutes)

1 pkg. onion soup mix
2 tbsp. oil
3 cups your favorite vegetables
1/2 tsp. ground ginger
1 cup water
1 cup cooked chicken, cut up
1 tbsp. cornstarch
1/4 cup apple juice

In a large skillet or wok, heat oil and stir-fry vegetables for about 2-3 minutes. Add onion soup mix, ginger, water and chicken. Bring to a boil, reduce heat, cover and simmer for 5 minutes.
Blend cornstarch with apple juice and stir into chicken mixture. Cook, stirring until sauce is thickened. Serve over rice and sprinkle with almonds if desired.
Makes 4 servings. Very good. :))
