BRUSCHETTA BREAD

1 loaf French bread, cut into 1-inch slices
1 small onion, finely chopped
2 cloves garlic, finely chopped
2 tbsp. extra virgin oil
1 tbsp. balsamic vinegar
1 tbsp. each oregano, basil and parsley (you can use fresh chopped)
Pinch of salt and pepper
2-3 large tomatoes, diced
1 cup mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated

Preheat oven to 375'F degrees.
Arrange the bread slices in a single layer on a baking sheet.
In a bowl, mix the onion, garlic, oil, vinegar, seasonings. Mix and gently toss in the tomatoes. Top bread slices with the tomato mixture. Sprinkle with mozzarella cheese and Parmesan cheese.
Bake 10 minutes in the preheated oven or until cheese is melted and bread is lightly toasted.

***NOTE: you can add 2 slices of bacon (cooked and crumble) to tomato mixture if you wish or olives.
And you can use 1 cup crumbled Feta cheese instead of the mozzarella cheese. YUMMY!!! :))
